I came up with this tasty English style chicken recipe when I had set my mind on making a honey garlic meal for dinner, but I realized at the last moment that I had no more soy sauce in my fridge. So I did what any born and bred English girl would do – I improvised with Worcestershire sauce (wuss-ter-sher). I will admit that the whole time this was cooking I was worried that it would come out too tangy. To my delight, it came out 8 hours later tasting rich in savory flavour with just the right amount of tang!
I hope you enjoy it as much as we did x
4 chicken breasts
1/2 cup of honey
1/4 cup of Worcestershire Sauce
1 tbs garlic powder
1/4 cup ketchup
3 cloves of garlic – minced
1 large onion – finely chopped
1/4 cup chicken broth
Salt & Pepper
*Optional, but highly recommended:
Brine chicken beforehand in a large bowl of cool water with a tablespoon of salt for 30 minutes before cooking. This ensures that your chicken will stay moist as it cooks.
Using a large Slow Cooker/Crockpot: add the chicken broth and toss your minced garlic and finely chopped onion into the pot.
Whisk together your honey, worcestershire sauce, garlic powder and ketchup in a small bowl and set aside.
Lightly cover your chicken breasts in salt and pepper and place them in the Slow Cooker.
Lastly, slowly pour your sauce over the chicken. Cook on low for 8 hours, or cook on high for 4 hours.
